บิสกิตเมล็ดทุเรียนกรอบ
บิสกอตตี (biscotti) เป็น ภาษาอิตาลี ความหมายว่า ขนมปังกรอบ…รวมถึง ขนมปังกรอบทุกประเภท ส่วนคำว่า…biscuit (บิสกิต) มาจากภาษาอเมริกาเหนือ ผ่านทางช่วงรอยต่อการเปลี่ยนแปลงของ ภาษาฝรั่งเศส ใช้เรียก ขนมปังกรอบอีกชนิด นั่นคือ คุกกี้
คนสัญชาติอเมริกัน…ชอบรับประทานคู่กับกาแฟ หรือเครื่องดื่มที่มี เอสเปรสโซ ยืนพื้น เช่น คาปูชิโน และ ลาเต้ มากกว่า ส่วน คนไทย มักจะเปิบกันเป็นของขบเคี้ยวหรือเป็นอาหารว่างระหว่างดูหนังฟังเพลง
บิสกิต…ส่วนใหญ่ทำมาจาก แป้งกับไข่ และ ส่วนผสมจำพวกน้ำตาล แต่มีนักศึกษาจาก มหาวิทยาลัยเทคโนโลยีราชมงคล(มทร.)ธัญบุรี ได้นำเมล็ดทุเรียน ซึ่งน้อยคนที่จะรู้ว่าสามารถรับประทานได้มาทำเป็น…บิสกิต…
นายณัฐชรัฐ แพกุล หรือน้องโอ นักศึกษาชั้นปีที่ 4 สาขาอาหารและโภชนาการ คณะเทคโนโลยีคหกรรมศาสตร์ มหาวิทยาลัยเทคโนโลยีราชมงคล (มทร.) ธัญบุรี ผู้คิดค้นเมนู “บิสกิตหน้าเมล็ดทุเรียนกรอบ” ขึ้นมา โดยมี ผศ.สุชาดา งามประภาวัฒน์ เป็นที่ปรึกษา บอกว่า ในเมล็ดทุเรียน 1 เมล็ด มีสารอาหารประกอบ พลังงาน, โปรตีน, ไขมัน, คาร์โบไฮเดรต, ใยอาหาร, น้ำ และ เถ้า
ในการเตรียมส่วนผสมของบิสกิตเมล็ดทุเรียนกรอบ ประกอบด้วย แป้งอเนกประสงค์ตราว่าว220กรัม เนยสด100กรัม น้ำตาลไอซ์ซิ่ง 15 กรัม ผงฟู 3 กรัม เกลือป่น 3 กรัม น้ำเย็น 45 กรัม และ นมสด 30 กรัม เริ่มวิธีทำตัวบิสกิตให้ร่อนแป้ง น้ำตาลไอซ์ซิ่ง ผงฟู และเกลือป่น ใส่อ่างพักไว้ ก่อนจะนำเนยหั่นเป็นชิ้นเล็กใส่ลงในแป้ง ใช้ที่ตัดเนยตัดเนยรวมกับแป้งจนเป็นเม็ดเท่าถั่วเขียว ใส่น้ำเย็นทีละน้อย เพื่อไม่ให้เนยละลายเมื่อเกิดความร้อนขณะที่นวดแป้ง เวลาอบถ้าเนยละลาย บิสกิตจะไม่ฟูติดเป็นแผ่นแข็งจนหมด นำมาทำเป็นก้อนกลมรวมกัน พักไว้ 15 นาที แล้วนำมาคลึงบนกระดาษไข ให้มีความหนาประมาณ 2 มิลลิเมตร ใช้พิมพ์กดขนมบนกระดาษไข ยาว 2 นิ้ว กว้าง 1.30 เซนติเมตร วางบนถาดอบที่ทาด้วยเนย ทาหน้าบิสกิตด้วยนมสดให้ทั่ว ใช้ส้อมจิ้มหน้าขนมเข้าอบที่อุณหภูมิ 180 องศาเซลเซียส พอสุกใช้ที่แซะออกมาพักบนตะแกรง รอให้เย็น หากผลิตออกมาตามสูตรนี้จะได้ บิสกิตทั้งหมด 75 แผ่น
ขั้นตอนการทำ
“…หลังจากที่ได้บิสกิตเรียบร้อยแล้ว ขั้นตอนต่อไปคือการเตรียมเมล็ดทุเรียนทอด เริ่มจากนำเมล็ดทุเรียนมาปอกเปลือกนอกออก แช่น้ำ นำมาผ่าครึ่งตามแนวยาว แล้วหั่นในแนวขวางบางประมาณ 1 มม. จากนั้นนำเมล็ดทุเรียนที่หั่นแล้วมาลวกในน้ำเดือด 30 วินาที เทใส่กระชอน เปิดน้ำเย็นให้ไหลผ่านทิ้งให้สะเด็ดน้ำ ก่อนจะใส่ถาดเกลี่ยให้บาง นำเข้าตู้อบลมร้อนที่อุณหภูมิ 65องศาเซลเซียส 5 ชั่วโมง (ถ้าไม่มีตู้อบลมร้อนให้ตากแดด 1 วัน) แล้วนำเมล็ดทุเรียนอบแห้ง 100 กรัม ใส่น้ำ 250 มล. และเติมน้ำส้มสายชู 15 กรัม ทิ้งไว้ 2 นาที เทใส่กระชอนทิ้งไว้ จากนั้นทอดในน้ำมันไฟแรงปานกลางประมาณ 3 นาที ตักขึ้นใส่กระดาษซับมันทิ้งให้เย็น…” น้องโอบอกอย่างนั้น
ขั้นตอนการเตรียมบิสกิตเมล็ดทุเรียนกรอบ ส่วนผสมบิสกิต เมล็ดทุเรียนทอดกรอบ ลูกเกด 20 กรัม เม็ดมะม่วงหิมพานต์อบกรอบ 40 กรัม น้ำตาลทราย 150 กรัม เกลือป่น 5 กรัม ครีมออฟทาร์ทาร์ 5 กรัม (เพื่อไม่ให้น้ำตาลจับตัวเป็นก้อน) แป้งสาลีอเนกประสงค์ตราว่าว 20 กรัม และน้ำ 80 กรัม
กรรมวิธีการทำ ให้นำแป้งสาลีอเนกประสงค์ตราว่าวละลายกับน้ำ 30 กรัม ใส่หม้อตั้งไฟอ่อนๆ ต้มจนแป้งสุกใส ใส่น้ำตาลทราย เกลือ ครีมออฟทาร์ทาร์ น้ำส่วนที่เหลือ เคี่ยวให้ละลายจนหมด วัดอุณหภูมิให้ได้ 114 องศาเซลเซียส (ถ้าไม่มีเทอร์โมมิเตอร์ สังเกตจากฟองจะละเอียด) นำน้ำเชื่อมที่ได้มาทาที่บิสกิตบางๆ แต่งหน้าด้วยเม็ดมะม่วงหิมพานต์ ลูกเกด และเมล็ดทุเรียนทอดกรอบ ราดหน้าด้วยน้ำเชื่อมอีกเล็กน้อย นำเข้าตู้อบที่อุณหภูมิ 150 องศาเซลเซียส 10 นาที แค่นี้ก็ได้ บิสกิตเมล็ดทุเรียนกรอบ เก็บไว้ได้ 1 อาทิตย์ (อุณหภูมิห้อง) หากเก็บไว้ในตู้เย็นสามารถอยู่ได้ถึง 1 เดือน

Biscuits With Crispy Durian Seed Toppings
“Oh” Mr. Natcharat Paekul, 4th year student from Department of Food and Nutrition in the Faculty of Home Economic Technology of Rajamangala University of Technology Thanyaburi (RMUTT) invents “Biscuit with crispy durian seed toppings” – Assist. Prof. Suchada Ngamprapawat is the advisor saying that 1 durian seed consists of nutrients for energy, protein, lipid, carbohydrate, fiber, water and ash.
The ingredients of biscuit with crispy durian seed toppings consists of multi-purpose flour kite brand 220 g, butter 100 g, icing sugar 15 g, baking powder 3 g, cold water 45 g and fresh milk 30 g.
How to make biscuits
– Sieve flour, icing sugar, baking powder and salt in a bowl
– Chop butter into tiny pieces and put them in flour
– Use butter knife chop butter mixed with flour into green bean seeds
– Gradually put cold water to prevent butter melting while kneading dough (If butter melts, biscuits will not rise and blend together.)
– Circle whole dough together and leave it for 15 minutes
– Bring them to roll on waxed paper for 2 mm of thickness
– Use the mold to press on the waxed paper 2 inches long and 1.30 cm wide
– Put molded dough on the baking tray with butter spread
– Spread biscuit faces with milk
– Use the fork to press on the biscuit faces
– Bake at 180 Degree Celsius
– Bring out when they are one, there will be 75 biscuits approximately
Recipe
“After getting biscuits, the next step is preparing fried durian seeds. Beginning with bringing durian seeds to peel their outer skins then soak them in the water. After that cut them half horizontally then chop vertically about 1 mm. Next bring chopped durian seeds to boil for 30 seconds and put them on the strainer then let cold water flow into them and leave them to drain off. Then spread them on the tray and then put them in hot-air oven at 65 Degree Celsius for 5 hours (If no hot-air oven, dry them in the sun for 1 day). And bring 100 g of baked durian seed in 250 ml of water. Then put 15 g of vinegar and leave for 2 minutes and put on the strainer. After that fry them deep oil with medium fire about 3 minutes and then fetch them to put onto oil-absorbing paper”, Oh said.
Instruction
– Mix multi-purpose wheat flour kite brand with 30 g of water in a pot and set it on low fire then boil till flour gets ripe
– Put sugar, salt, offtartar cream, the rest of water and simmer till everything melts at 114 Degree Celsius (if no thermometer, notice from fine bubbles)
– Bring syrup to spread on biscuits thin
– Top with cashew nuts, raisins and crispy durian seeds
– Pour little more syrup on tops
– Bake at 150 Degree Celsius for 10 minutes
Then you will get biscuits with crispy durian seeds which can be kept for a week in room temperatures but 1 month in a refrigerator.
For this idea of adding value for durian seeds, the inventor doesn’t preserve the formula. He wants housewife groups bring this to make as products in the market. Those interested can call Nong Oh at 08-9252-1300 at the daytime.
